Swedish protein crops on the dinner table

There are many that choose a vegetarian alternative on the plate and then it is important we can offer a Swedish, locally produced vegetarian alternative

In order to meet demand and create a future vegetarian grocery, we are testing different ways to use the Swedish fava bean. We have found possibilities for the bean to be in hummus, potato pancakes and bread. We have test environments for the fava bean at Sötåsen agricultural college. There we investigate the outcome, appropriate time of harvest and how we can transport the beans to the fabric in the best way possible.

But, why do we do this? Well, we want even more Swedish cultivated beans on the Swedish dinner tables. Therefore, another ambition of the project is to spread knowledge on how Swedish protein crops can be used as a brilliant new element in cooking.
